Cillar de Silos
Located in the northernmost area of the Ribera del Duero, Cillar de Silos has 57 hectares of vineyards between 12 and 80 years old located on hillsides and sheltered by forests.
A situation that gives them their own characteristics and that together with the combination of experience, work and technique and the fact of having underground cellars of more than 300 years with constant humidity and natural temperatures, allows to obtain unique wines.
The selection begins in the vineyard itself, respecting the environment and always seeking the quality of the optimum grape, which, in the winery, passes through different processes, from the selection table to the encubado, the cold maceration or the fermentation.
During aging, the wines remain in French oak barrels for between 13 and 18 months, a period during which excess wood is avoided to maintain its fruity character so that over time they acquire their own personality.
